About Dallas Cuddy
Cuddy apprenticed at The Point under renowned Chef Ian Curley. In 2001 he headed to London taking up a position at one Michelin-starred Nobu on Park Lane. Nobu provided a life-changing experience for Cuddy, forever influencing his approach to food. Upon leaving Nobu, Cuddy trained at the two Michelin-starred Pied à Terre, Gordon Ramsay’s one Michelin-starred Pétrus, and John Torode’s Smiths of Smithfield.
Upon his return to Melbourne Cuddy joined the newly re-opened Botanical under Chef of the Year Paul Wilson. Cuddy then took up the post of Head Chef with Verge between 2004 - 2012. During this time Chef Cuddy was awarded the Young Chef of the Year by The Age Good Food Guide in 2007.
Chef Cuddy is now wooing Asia at The Prime Society with his signature style that focuses on seasonal produce presented with a modern Japanese twist. Cuddy is at the forefront of a wave of renowned chefs attracted to Singapore's lively culinary scene. Singapore’s cultural fusion creates depth and diversity in the food scene, making it the perfect place to experiment with ingredients and styles.
