With an impressive international pedigree Mark Briggs is bringing his passion for fresh local ingredients to the role of executive chef at Waterfront Restaurant Southgate.
About Mark Briggs
Originally from a small town in the North of England, Mark was inspired to cook from an early age by his pastry-chef grandmother. Following his apprenticeship, Mark established his career working in Michelin star restaurants across the United Kingdom including, La Tante Claire, Midsummer House and Longuieville Manor. During this time Mark was fortunate to work with globally renowned chefs Jamie Oliver, Pierre Koffman, Mauro Bregoli and Daniel Clifford.
Moving from England to Australia in 2004, Mark began working for Shannon Bennett at the original Vue de Monde in Carlton. During his time at Vue de Monde, he was appointed Head Chef of the restaurant at Normanby Chambers, was instrumental in establishing and running Café Vue at Heide and most recently Vue de Monde Rialto.
Mark’s next challenge was opening The Sharing House for restaurateur Paul Mathis. During this time Mark received the prestigious Age Good Food Guide Young Chef of the Year Award.
In his current role, Mark brings his finesse and a finely tuned commitment to flavour to Waterfront Southgate’s extensive fresh seafood menu. Opening onto the Yarra River promenade, the Waterfront offers extensive alfresco dining and is the ideal place to savour the delights of the city.
