About Martin Horsley
Born in England, Martin's career started at the age of 19 in the kitchen of Scotland’s prestigious Gleneagles Hotel. From there he honed his cooking knowledge and techniques, working in a number of five star hotels in Europe before spending a year at the one Michelin Star restaurant, 21 Queens Street, in Newcastle, under the guidance of British chef, Terry Leybourne.
In 1996, Martin moved to Australia working for the Sheraton Mirage Port Douglas and the Sheraton in Perth before returning to the UK to work again with Terry Leybourne.
In 2002 Martin returned to Australia to work with Raymond Capaldi and Gary Mehigan at their Melbourne restaurant, Fenix, where the combining of their talents saw the venue quickly awarded 'one hat' by The Age Good Food Guide. After leaving Fenix in 2003, Martin worked in senior positions at Melbourne hotels including Le Meridian and Stamford Plaza, and was appointed Executive Chef at Sofitel Mansion & Spa at Werribee Park in 2008. Martin assumed the role of Restaurant Chef at No35 in January 2013.
No35 has recently unveiled its new spring menu featuring an array of tantalising dishes created with the finest and freshest local produce.
