Renowned for his innovative and unique pastries, Matt Forbes has recently opened his first cafe venture, Cobb Lane Bakery, located in Yarraville, Victoria.
About Matt Forbes
Hailing from Yorkshire, England, Matt’s career started with work experience followed by a “dream come true” job as a pastry chef with Raymond Blanc at two-Michelin-starred institution, Le Manoir Aux Quat’ Saisons in Oxfordshire. A role with distinguished chef Michael Wignall at Devonshire Hotels came after, as well as a position with chef Michel Roux at the Waterside Inn.
In 2007 Matt relocated to Australia as head pastry chef at Shannon Bennet’s, Vue de Monde. This was followed by tenure with Gordon Ramsay at Southbank eatery Maze and a stage at Copenhagen institution, Noma.
After recognising a gap in the sweets market of Melbourne’s cafes, Matt decided to start his own business, wholesaling his unique sweet creations to some of the city’s most popular coffee destinations.
Matt has now embarked on the next chapter of his journey with the opening of his own cafe, Cobb Lane. A 20 seat venue with indoor and outdoor dining, Cobb Lane serves a breakfast and lunch menu of traditional English fare, in addition to his amazing pastries.
Matt has kindly shared with Flowerdale Farm his recipe for French Toast with Quince, Pear & Passionfruit. View this and other fantastic meal ideas in the recipe section of our website.
