About Michael Greenlaw

Melbourne born, Michael commenced his career in the busy kitchens of Crown Casino before he relocated to London and honed his skills at Bibendum, a venue which is widely regarded as one of the UK's most influential restaurants. After two years abroad, Michael returned to Melbourne to gain invaluable experience at one of Australia's best restaurants, Vue de Monde, in his role as Commis Chef working with Shannon Bennett.
In 2010 the lure of New York saw Michael join the team at GILT, a 2 Michelin star restaurant at the New York Palace Hotel. Upon his return to Melbourne Michael took on the role of Chef de Cuisine at Number 8 Restaurant and Wine Bar which he enjoyed for two and a half years.
Consolidating his vast international experience, in 2013 Michael headed off to Dubai to work at the iconic Atlantis The Palm Resort where he and his team established Dubai's' first fully wood fired steak house, Seafire Restaurant. Once again returning to Melbourne, Michael took on the role of Executive Chef at Lindenderry at Red Hill, a boutique hotel with a seasonal paddock to plate focus.
In 2016 Michael accepted his current role, joining the Marriott group as Executive Chef at the Westin Melbourne. Here Michael is responsible for menu design for Allegro Restaurant, Lobby Bar and the hotel's business events. Applying over ten years' experience in standalone, Michelin star and hatted restaurants and hotels, Michael brings to this role an impressive creative flair and passion for delivering unique, modern Australian cuisine.
