Cubed Watermelon and Feta Salad with Rocket Microgreen

  • 150 grams pumpkin seeds
  • 1 lime's worth of lime juice
  • 500 grams Greek feta
  • 1 punnet Flowerdale Farm Mustard Cress Microgreens
  • 1 tablespoon(s) Olive oil
  • 1.5 kilo(s) watermelon

Method

  1. In a warm fry pan lightly toast the pumpkin seeds until golden.
  2. Cube the watermelon and feta into 5cm cubes and arrange together on a serving plate. Sprinkle over pumpkin seeds and Flowerdale Farm Mustard Cress.
  3. Then, drizzle with lime juice and oil. Serve immediately.
