About Julian & Abby

Both Julian and Abby are qualified chefs with experience in high-end restaurants. Abby studied agriculture at the University of Melbourne and was a viticulturist at Treasury Wine Estates, before undertaking Cuisine & Patisserie training at Le Cordon Bleu Australia. Following her qualification Abby held chef positions at Appellation at The Louise and FINO Seppeltsfield.

In 2016 she and Julian established El Estanco. Abby's dual passion for growing and working with fresh produce is evident in the abundant kitchen garden and seasonal, ever evolving menu. With a paddock to plate approach, they work with what is seasonally available. "In a week, we could have up to three different menus," Julian says.

Julian grew up in Colombia, South American and El Estanco pays homage to his upbringing. "Our restaurant is based upon our philosophy of keeping things simple and honest. We believe food should be enjoyed with family, with friends, with excellent coffee, with wine, with laughter, with love", says Julian.

Cooking on wood fires is chef Julian's forte, using traditional South American methods to create innovative Spanish and Colombian style dishes. At El Estanco Friday Fiestas are very popular, where the menu alternates weekly between themed South American menus and wood oven pizza.

Renowned for its rustic charm, great vibes and amazing food, the inviting atmosphere of El Estanco has become a popular spot in the Barossa for locals and visitors alike.

Julian has kindly shared his recipe for Mexican Style Pork Belly with a Citrus Cold Lentil Salad & Charred Baby Corn on the Husk. Enjoy this dish at El Estanco or view it on the Flowerdale Farm website.
