Maria Kabal is the newly appointed Head Chef at Melbourne's renowned Spanish restaurant Añada. A fierce advocate for women in the culinary scene, Maria runs an all-female kitchen, which is delivering rustic, full flavoured Spanish dishes with elegance and attitude.

About Maria Kabal

Born in Estonia, Maria grew up with a family that emphasised travel and cooking, sparking her interest in culinary arts from a young age. "I think my food is really inspired by the part of world I come from," Maria says. "I'm from the northeastern part of Europe, which means I've got a wonderful mix of influences. My cooking is really about simple peasant style cooking and making something out of nothing. The added influence of clean Scandinavian flavours and plating allows me to bring in some creativity."
Maria began her chef career at Caravan King's Cross in London, where she trained under Australian chefs. During this time, she also cooked alongside several famous chefs from Copenhagen's Noma.
Upon making the move to Australia, she landed in the role of Sous Chef at Añada and spent three years in the kitchen with chefs Russell Hall and Jesse Gerner. When Hall recently moved on to work at Park St. in Carlton North, it was a natural progression for Maria to step into the role of Head Chef.
Maria promotes the use of quality ingredients from small, local farmers and utilises rare and interesting meats and offal to add unique flavour and texture. Her modern, artistic styling, recent menu additions and hard-working female team are receiving rave reviews for their fresh interpretation of traditional Spanish fare. Maria and her team of culinary queens are now looking forward to bringing Añada into its tenth year of business in Fitzroy.
