About Patrick Browning

With over 20 years in the hospitality industry, Patrick commenced his apprenticeship at the Park Royal Wellington in his homeland of New Zealand. Migrating to Australia in 2000, he soon landed the role of Chef de Partie at Becco, a Melbourne dining institution known for its award winning modern Italian food. Patrick's next career move was onto the Melbourne Wine Room, where as Sous Chef he honed his skills under the direction of Karen Martini.

A desire to see more of Australia led Patrick on a journey north, where took up a post at the luxury Green Island Resort in the heart of the Great Barrier Reef. During his time traveling and working in Northern Queensland Patrick was introduced to the unique flavours of native Australian ingredients, which he continues to showcase in his menus today.

With Victoria's vibrant food culture calling, he returned to the state and settled in the regional centre of Alexandra, 2 hours drive north east of Melbourne. The region, which sits between the Yarra Valley and The High Country, is known for its premium local produce. At the Alexandra Hotel Patrick creates dishes which feature local producers including Flowerdale Farm, Goulburn River Trout, Murrindindi Olive Oil and his own home-grown produce from Fairweather Farmgate.

With old world accommodation, café style dining during the day and a produce driven a la carte evening menu, The Alexandra Hotel is the perfect destination for a weekend getaway.

Patrick has kindly shared with us two of his favourite recipes showcasing Flowerdale Farm native produce: Trout Fillet with Samphire, Microgreens & Finger Lime Caviar and Cured Trout with Finger Lime. Enjoy these dishes at Alexandra Hotel or view the recipes on the Flowerdale Farm website.
