Healthy Gourmet Salad

  • 400 grams tin of red lentils, drained and rinsed
  • 1 tablespoon(s) olive oil
  • 400 grams tin of chickpeas, drained and rinsed
  • 0.5 red onion, finely sliced
  • 1 tablespoon(s) balsamic vinegar
  • 0.5 cucumber, sliced into thin strips
  • 1 tablespoon(s) wholegrain mustard
  • 2 125 g punnets of Flowerdale Farm Gourmet Mix
  • 300 grams tempeh, cut into strips
  • 1 cup(s) Flowerdale Farm Continental Parsley leaves

Adjust Quantity


  1. In a lightly oiled fry pan, sauté the tempeh until golden on edges and warmed through. In a large salad bowl, gently toss together, gourmet mix, cucumber, chickpeas, lentils, onion, parsley and tempeh.
  2. In a separate glass, mix the vinegar, olive oil and mustard.
  3. Gently toss dressing through salad and serve immediately.
