- 50 mL Tanqueray gin
- 25 mL Whole lemon juice
- 15 mL Lavender syrup created from
- 80 grams Dried lavender buds
- 4 liter(s) Sugar syrup
Method
- For the lavender syrup: Add dried lavender buds and sugar syrup to a pot over medium heat and lightly simmer for ten minutes. Strain and bottle for use.
- For the cockatil: Combine gin, lemon juice and lavender syrup in a cocktail shaker over ice. Shake and strain into a highball glass filled with fresh ice. Top with soda water. Garnish with a lemon twist, lemon thyme and fresh lavender buds.
